Milk allergies mean no cheese, no cream, etc. Until NOW. This product makes fantastic creamy soups, made a great dairy free Mac and cheese (using Mimic Cream and Roads End Organics powdered dairy free Chreese Mix). Using up the rest in a cup of coffee and it mixes in fine (don't know why some other reviewer had a problem with their coffee, because I didn't)

My son is on a gluten-casein free, soy free diet. This product is as smooth as it says it is. I bought the unsweetened kind so I could control the sugar. We are ice cream nuts around here and using this product completely surpassed any dairy ice cream I have ever had. Let alone the weird texture kind you get at the super market.

I became gluten, soy ,and milk intolerant and missed all the easy recipes I used to make with various canned "cream of" soups, all of which contain soy and milk (and sometimes, gluten). With this product, a can of sliced mushrooms and a hand-held blender, I was able to swiftly make my own gluten-, soy-, and dairy-free cream of mushroom soup which worked perfectly in my old chicken and rice casserole recipe and was so delicious it brought tears to my eyes!

I've only used this as a coffee creamer so far but absolutely love it. Yum. Am going to try fudge and other recipes but think I need to order the bigger containers for that as I am hooked on Mimic Creme for my coffee. I haven't had problems with separation but you do need to shake it well before each use. Looking forward to the new product they are working on that will be whip-able.

Don't let the separation fool you. It has nothing to do with the freshness or taste of the product. Go to the website to read the science behind why this happens. My only issue is the price and the fact that that it is not yet sold retail where I live. The product is definately VERY good and I would use it consistently if it was not so expensive to acquire.
